  • 2 pounds chuck roast, sliced into 1-inch strips Best choice for tenderness and flavor.
  • 3 tablespoons flour Helps thicken the sauce.
  • 3 tablespoons butter Adds richness to the dish.
  • 8 cups beef broth Can substitute with low-sodium beef stock.
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • to taste salt
  • 12 ounces egg noodles Can substitute for wide noodles, rotini, or pappardelle.
  • 1/2 cup sour cream Can use Greek yogurt for a lighter finish.

Method

Cooking Instructions
  1. Heat a large pot or Dutch oven over medium-high heat. Add the oil, then add the beef and brown it well, stirring now and then.
  2. Lower the heat to medium-low. Melt in the butter, then sprinkle on the flour; stir for about 2 minutes.
  3. Stir in the beef broth in batches, mixing well to avoid lumps. Then add the Worcestershire sauce, garlic powder, onion powder, and black pepper.
  4. Cover the pot and bring it to a simmer. Cook for about 2 hours, or until the beef is tender.
  5. During the last 10 minutes, add the egg noodles and cook until they are soft but still hold their shape. Add salt to taste.
  6. Temper the sour cream by stirring in a few spoonfuls of hot broth until it warms up. Then stir it into the pot and serve right away.
