Ingredients

For the shortcrust pastry
  • 4 cups all-purpose flour, plus more for rolling Choose a good quality flour with a fine texture.
  • 1 cup lard or margarine, softened Lard gives a more traditional flavor.
  • 1 1/4 cups granulated sugar
  • 2 medium eggs
  • 1 pinch baking ammonia powder (or 1/2 teaspoon baking powder) Use baking powder if baking ammonia is unavailable.
  • Vanilla extract or lemon zest, to taste Choose based on preferred flavor.
For the pastry cream
  • 4 medium egg yolks
  • 1/2 cup granulated sugar
  • 1 1/8 ounces rice starch (about 4 tablespoons) Can be replaced with extra cornstarch.
  • 1 1/8 ounces cornstarch (about 4 tablespoons)
  • 2 cups whole milk Can substitute with 2 percent milk.
  • Vanilla or lemon zest, to taste Choose based on preferred flavor.
For finishing
  • 1 egg white, lightly beaten, for brushing
  • Butter or lard, for greasing the molds

Method

Make the Dough Base
  1. Combine flour and sugar in a large bowl or stand mixer bowl. Add softened lard or margarine, baking ammonia or baking powder, and your chosen flavoring (vanilla or lemon zest). Mix until the fat is evenly worked into the dry ingredients and the mixture looks sandy.
Add the Eggs and Chill
  1. Add the eggs one at a time, mixing after each addition until the dough comes together. Shape it into a log, wrap it well, and chill for at least 4 hours or overnight for better texture.
Cook and Cool the Custard
  1. Warm the milk in a saucepan until hot but not boiling. Whisk yolks with sugar and chosen flavoring in a bowl, then whisk in rice starch and cornstarch until smooth. Slowly pour this mixture into warm milk while stirring constantly. Cook over gentle heat until thickens and bubbles appear. Scrape into a bowl, cover with plastic wrap, and refrigerate until fully cold.
Shape the Shells
  1. Preheat oven to 350°F and grease molds. Cut chilled dough into discs, rolling out half to press into base of molds.
Fill, Seal, and Bake
  1. Fill each base with cold pastry cream, mound slightly in center. Roll out remaining dough discs for lids, place over filling, press edges to seal. Brush tops with beaten egg white, and bake for about 30 minutes until deep golden.
Cool and Serve
  1. Let pasticciotti cool enough to handle before removing from molds. Best served fresh, but can be kept airtight for up to 1 day.

Notes

Dough needs time to rest for best texture. Avoid common mistakes like skipping chill time or overfilling molds for best results.
