Ingredients

For the marinade
  • 1/2 cup apple juice or apple cider Use apple cider for a deeper flavor.
  • 2 tablespoons creamy peanut butter Natural peanut butter can be used as a substitute.
  • 2 tablespoons soy sauce Low-sodium soy sauce can be used to reduce salt.
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
For the bundles
  • 4 (3-ounce) fully cooked smoked sausages Choose sausages that are firm and easy to slice.
  • 2 medium apples (McIntosh or Golden Delicious) Honeycrisp or Fuji can be used as alternatives.
  • 8 ounces bacon Turkey bacon can be used for a leaner option.

Method

Preparation
  1. Blend the apple juice, peanut butter, soy sauce, cinnamon, and ginger until smooth. Pour into a medium bowl.
  2. Cut the smoked sausages into 3/4- to 1-inch pieces and add to the marinade. Cover and refrigerate for about 4 hours.
  3. Preheat the broiler and line a baking sheet with foil, placing a rack on top.
  4. Core the apples and cut into thick pieces that fit beside the sausage.
  5. Drain the sausage pieces and reserve the marinade.
Assembly
  1. Cut the bacon strips in half and wrap each bacon piece around an apple slice and a sausage piece. Secure with a toothpick.
  2. Dip each bundle into the reserved marinade before placing it on the rack.
Cooking
  1. Broil the bundles about 4 inches from the heat for 3 to 5 minutes per side, watching closely to avoid burning.
