Ingredients

Main Ingredients
  • 24 pieces Medjool dates Choose plump and sticky dates for best results.
  • 12 slices regular-cut bacon Avoid thick-cut bacon for best cooking results.
  • 4 oz goat cheese Can substitute with cream cheese or feta.
  • 2 tbsp honey Use lightly to prevent stickiness.
  • as needed pieces wooden toothpicks If needed to secure bacon.

Method

Preparation
  1. Preheat oven to 375°F (190°C) and line a rimmed baking sheet with parchment paper.
  2. Use a small paring knife to cut a slit lengthwise along each date, remove the pit, and gently open each date.
  3. Stuff each date with about 1 teaspoon of goat cheese and gently press the sides together.
  4. Cut each slice of bacon in half crosswise. Wrap one half-slice around each stuffed date, seam-side down on the baking sheet. Secure with a toothpick if needed.
  5. Drizzle the 2 tablespoons of honey over the wrapped dates.
Cooking
  1. Bake the dates for 12 to 15 minutes, or until the bacon looks crisp and browned.
  2. Let them cool on the pan for 3 to 4 minutes before transferring to a serving platter.
Serving
  1. Serve warm, removing toothpicks if desired.

Notes

These dates can be prepared ahead of time and baked just before serving. For best texture, store leftovers in an airtight container.
