Ingredients

Dry Ingredients
  • 2.5 cups old-fashioned rolled oats Use quality oats for the best texture.
  • 1 cup all-purpose flour Spoon and level for accuracy.
  • 1 teaspoon baking powder
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon fine sea salt
Wet Ingredients
  • 0.5 cup unsalted butter, melted and cooled
  • 0.5 cup packed light brown sugar
  • 0.25 cup honey
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
Mix-Ins
  • 0.5 cup dried cranberries
  • 0.5 cup chopped walnuts
  • 0.25 cup mini chocolate chips

Method

Preparation
  1. Preheat the oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, allowing for overhang for easy lifting later.
Mixing
  1. In a large bowl, whisk together the rolled oats, flour, baking powder, cinnamon, and salt.
  2. In a separate bowl, whisk together the melted butter, brown sugar, and honey until smooth, then mix in the eggs and vanilla.
  3. Pour the wet mixture into the dry ingredients and stir gently until combined. Fold in the cranberries, walnuts, and chocolate chips carefully.
Baking
  1. Spread the mixture evenly into the prepared pan and press down firmly with a spatula or hands.
  2. Bake for 22 to 25 minutes, or until the edges are golden and the center looks set.
  3. Allow the bars to cool completely in the pan for about 1 hour before lifting them out and slicing them into rectangles.

Notes

Ensure to press the mixture firmly into the pan, let the bars cool completely before slicing, and avoid overmixing to maintain a tender texture. Optional substitutions for flexibility in ingredients are recommended.
