Ingredients

Main Ingredients
  • 2 pieces bone-in or boneless fully cooked ham steaks (about 1 lb each, 3/4-inch thick) Choose evenly thick slices for best results.
  • 2/3 cup packed light brown sugar Can substitute with dark brown sugar for a richer flavor.
  • 2 tbsp unsalted butter
  • 1 tbsp Dijon mustard Can be replaced with yellow mustard for a milder taste.
  • 1 tbsp apple cider vinegar White or rice vinegar can be used as alternative.
  • 1/4 tsp ground cloves A tiny pinch of allspice can be used as a substitute.
  • 1/4 tsp ground cinnamon
  • 1/4 cup pineapple juice (or apple juice) Can replace with apple juice for a different flavor.
  • to taste fresh thyme sprigs, for garnish (optional) Other herbs like parsley or rosemary can also be used.

Method

Preparation
  1. Preheat your oven to 375°F. Lightly grease a large baking dish or rimmed baking sheet that is just big enough to hold the ham steaks in a single layer.
  2. Use a sharp knife to score the fat edge of each ham steak in a few places to prevent curling as they bake.
Making the Glaze
  1. Set a small saucepan over medium heat and melt the butter. Add the brown sugar, Dijon mustard, apple cider vinegar, ground cloves, and ground cinnamon.
  2. Stir until the sugar dissolves and the mixture looks smooth, about 2 to 3 minutes. Whisk in the pineapple juice and let it come to a gentle simmer for 1 minute.
Baking the Ham
  1. Place the ham steaks in the prepared baking dish and brush or spoon about two-thirds of the glaze evenly over the tops.
  2. Reserve the rest of the glaze for basting and serving later.
  3. Bake the ham steaks for 15 to 18 minutes, basting once halfway through with a little reserved glaze.
  4. Ensure the ham is heated through, reaching an internal temperature of at least 140°F, and the glaze is bubbling and lightly caramelized.
Finishing Touches
  1. For a deeper caramelized finish, switch the oven to broil on high for the last 1 to 2 minutes, watching closely to prevent burning.
  2. Let the ham steaks rest for 3 to 5 minutes, then spoon any remaining glaze from the pan over the top and serve warm with thyme sprigs if desired.
