Ingredients

For the cauliflower
  • 1 head 1 head of cauliflower, cut into bite-sized pieces (about 10 cups)
  • 1 tablespoon 1 tablespoon oil
  • Salt and pepper, to taste
For the creamy sauce
  • 8 oz 8 oz cream cheese, softened
  • 1/2 cup 1/2 cup sour cream
  • 1/4 cup 1/4 cup mayonnaise
  • 2 tablespoons 2 tablespoons dry ranch dressing mix
  • 3 cloves 3 garlic cloves, minced
For the cheese and toppings
  • 1 cup 1 cup shredded cheddar
  • 1 cup 1 cup shredded Monterey Jack
  • 1/3 cup 1/3 cup cooked, crumbled bacon
  • 1 piece 1 green onion, thinly sliced

Method

Roast the Cauliflower
  1. Heat the oven to 400°F. Spread the cauliflower in one layer on a large baking pan, drizzle with the oil, season with salt and pepper, then toss to coat. Roast for about 15 minutes, or until the cauliflower is tender-crisp.
Mix the Cheese Filling
  1. While the cauliflower roasts, combine the cheddar and Monterey Jack in a small bowl. In a medium bowl, mix the cream cheese, sour cream, mayonnaise, ranch mix, garlic, and 1 cup of the shredded cheese blend until smooth.
Combine and Transfer to the Dish
  1. Coat a 2-quart casserole dish with nonstick spray. Place the roasted cauliflower in a large bowl, then add the cream cheese mixture. Stir gently and then transfer everything to the casserole dish.
Add Toppings and Bake
  1. Top the casserole with the remaining cheese, bacon, and green onion. Bake for about 20 minutes, or until heated through and bubbly.
Cool and Store if Needed
  1. Let the casserole cool completely first. Then wrap it tightly or place it in an airtight container. Refrigerate for up to 3 to 4 days, or freeze for 6 months or more.
