Ingredients

For the casserole
  • 2 lb Brussels sprouts, halved lengthwise (quartered if large)
  • 1 tbsp olive oil
  • 6 slices bacon, chopped
  • 2 tbsp all-purpose flour
  • 1.75 cups whole milk Can substitute with 2% milk
  • 1.5 cups shredded Gruyère or sharp cheddar Can swap in Monterey Jack or fontina
  • 0.5 tsp onion powder
  • 0.25 tsp salt, plus more to taste
  • 0.25 tsp black pepper
For the topping
  • 10 count Ritz crackers, crushed Can replace with plain breadcrumbs or crushed buttery crackers
  • 0.25 cup shredded Parmesan Can substitute with Pecorino Romano
  • 1 tbsp salted butter, melted

Method

Preparation
  1. Heat the oven to 375°F. Rinse the Brussels sprouts, trim off any wilted outer leaves, then halve them lengthwise or quarter large ones.
Cooking Sprouts
  1. Heat the olive oil in a skillet over medium-high heat. Add the sprouts and cook for 5 to 6 minutes, stirring until tender-crisp and lightly browned. Transfer to a 2-quart baking dish.
Bacon and Sauce
  1. In the same skillet, cook the chopped bacon over medium-high heat until crisp. Remove the bacon, leaving about 2 tablespoons of drippings in the pan. Lower the heat to medium, stir in the flour, and cook for 2 to 3 minutes.
  2. Gradually add the milk while whisking until smooth.
Combine Ingredients
  1. Remove the skillet from heat, whisk in the Gruyère or cheddar, onion powder, salt, and black pepper. Pour the sauce over the sprouts, add the bacon, and stir gently to combine.
Topping and Baking
  1. In a small bowl, mix the crushed Ritz crackers, Parmesan, and melted butter. Sprinkle the topping over the casserole.
  2. Bake uncovered for 20 to 25 minutes until the top is browned and the sauce is bubbly.
Make Ahead or Storage
  1. Assemble the casserole up to 2 days in advance and refrigerate. Add about 5 minutes to the baking time if it is cold.
  2. Store leftovers in an airtight container in the refrigerator for up to 4 days. Baked leftovers can be frozen for up to 1 month.

Notes

Serve the casserole with roasted turkey, baked ham, or roast chicken. Pairs well with a fresh green salad.
