Ingredients

Main Ingredients
  • 1.5 pounds flank steak, butterflied Choose a fresh piece with an even shape.
  • 1 tablespoon olive oil For sautéing the filling.
  • 4 ounces mushrooms, chopped Earthy flavor to the filling.
  • 1 small shallot, minced For a mild onion taste.
  • ¼ teaspoon fresh thyme Herb for additional flavor.
  • 8 ounces sliced Provolone cheese Can substitute with mozzarella or fontina.
  • 2 cups packed baby spinach Can substitute with baby kale or Swiss chard.
  • Salt and freshly ground pepper To season the steak and filling.

Method

Preparation
  1. Butterfly the flank steak, or slice it horizontally almost all the way through so it opens like a book. Pound to an even thickness and season both sides generously with salt and pepper.
  2. Heat olive oil in a sauté pan over medium heat. Add mushrooms, shallot, and thyme, cooking until soft. Then add spinach and cook just until wilted. Let mixture cool before assembling.
Assembly and Cooking
  1. Preheat oven to 350°F. Lay the beef flat with the grain running left to right. Cover with Provolone, leaving a 1-inch border, and spread the spinach mixture on top.
  2. Roll the steak up tightly away from you and tie with butcher's twine at 2-inch intervals.
  3. Place in a greased baking dish or on a rack in a roasting pan. Roast for 45 minutes to 1 hour, until the internal temperature reaches about 130°F for medium-rare.
  4. Cover with foil and let rest for 10 minutes before slicing.

Notes

Avoid overcooking flank steak. Ensure the mushroom and spinach mix cools before filling to prevent melting the cheese too early. Leave a 1-inch border when filling to prevent spillage.
