Ingredients

For the Candy
  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 large egg whites, room temperature For best results, use room temperature egg whites.
  • 1/4 tsp fine sea salt
  • 1 tsp pure vanilla extract
  • 1/2 cup pecans, chopped Can be substituted with walnuts or almonds.
  • 1/4 cup candied red and green cherries, chopped Optional for a festive touch.

Method

Preparation
  1. Line two baking sheets with parchment paper or wax paper.
Cooking the Sugar Syrup
  1. In a medium heavy-bottomed saucepan, combine the sugar, corn syrup, and water. Cook over medium heat, stirring until the sugar dissolves, then let it boil undisturbed until it reaches 260°F, about 15 to 18 minutes.
Whipping the Egg Whites
  1. While the syrup cooks, whip the egg whites and salt in a stand mixer until stiff, glossy peaks form, about 3 to 4 minutes.
Mixing the Candy
  1. Once the syrup reaches 260°F, remove it from heat. With the mixer running on medium-low, carefully stream in the hot syrup into the whipped egg whites. Increase speed to medium-high and beat for 8 to 10 minutes until thick and glossy.
Folding and Shaping
  1. Fold in the vanilla extract, then quickly fold in the pecans and optional cherries. Drop rounded tablespoons onto the prepared baking sheets, spacing them about 1 inch apart.
Setting the Divinity
  1. Let the divinity sit at room temperature for at least 2 hours or until firm. Store in an airtight container.

Notes

Avoid making divinity on very humid days, as excess moisture can hinder setting. Use clean, grease-free tools for whipping egg whites for best results.
