Ingredients

For the peppermint filling
  • 1/4 cup unsalted butter, softened Should be soft, not melted.
  • 1/3 cup light corn syrup Can be substituted with honey or golden syrup.
  • 1 1/2 teaspoons peppermint extract Can use spearmint extract for a gentler flavor.
  • 3 1/2 cups powdered sugar Sift if clumpy.
For the chocolate coating
  • 12 ounces semi-sweet chocolate, roughly chopped Can be substituted with dark chocolate or milk chocolate.

Method

Mix the Peppermint Dough
  1. In a large bowl, beat the softened butter, light corn syrup, and peppermint extract with a mixer until smooth.
  2. Add the powdered sugar and mix on low for a couple of minutes until the mixture is crumbly, then knead by hand until it comes together.
Roll the Filling
  1. Dust a sheet of parchment with powdered sugar and knead the dough into a ball.
  2. Roll it out to about 1/4 inch thick, placing another sheet of parchment on top to prevent sticking if needed.
Cut the Patties
  1. Use a 1 1/4- to 1 1/2-inch round cutter to cut the peppermint patties.
  2. Gather scraps, reroll, and cut more rounds as needed. If the dough softens, freeze for 5 to 10 minutes.
Freeze Until Firm
  1. Place the cut patties on a parchment-lined tray and freeze for 15 to 20 minutes until firm.
Melt the Chocolate and Dip
  1. Microwave chopped chocolate in 20 to 30 second bursts, stirring until smooth.
  2. Dip each frozen patty into the chocolate, turning to coat and tapping off excess. Freeze again for 10 to 15 minutes if they soften.
Set, Serve, and Store
  1. Refrigerate dipped patties for 30 to 45 minutes, or until chocolate is firm.
  2. Serve or pack into tins for gifts, layered between wax paper.
