  • 1/4 cup whole milk
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 tbsp unsalted butter
  • 1 cup cooked breakfast sausage, crumbled Choose a good quality sausage
  • 1 cup shredded Mexican-blend cheese Can substitute with cheddar or Monterey Jack
  • 1/4 cup diced green chiles (canned, mild) Can substitute with jalapeños for spicier flavor
For Assembly
  • 10 small (6-inch) flour tortillas Use different sized tortillas if preferred
  • Nonstick cooking spray, for the baking sheet

Method

Preparation
  1. Preheat your oven to 425°F and line a large baking sheet with parchment paper.
  2. Whisk the eggs, milk, salt, and pepper together in a large bowl until well combined.
  3. Melt the butter in a nonstick skillet over medium-low heat, pour in the egg mixture, and cook gently, pushing the eggs from the edges toward the center every 20 to 30 seconds until softly scrambled and just set (about 4 to 5 minutes).
  4. Remove from heat and fold in the cooked sausage, shredded cheese, and diced green chiles.
Assembly and Baking
  1. Warm the tortillas briefly in a microwave or skillet until soft and pliable.
  2. Lay the tortillas on a clean surface and divide the filling among them, placing it in a line slightly below the center.
  3. Roll each tortilla tightly around the filling and place them seam-side down on the prepared baking sheet.
  4. Lightly spray the tops with nonstick cooking spray and bake for 12 to 15 minutes until golden brown and crisp.
  5. Let cool for 2 to 3 minutes before serving.
