Ingredients

For the filling
  • 250 grams One 250g tub spreadable cream cheese Choose a tub that feels soft and easy to stir.
  • 2-3 teaspoons 2 to 3 teaspoons milk Start with 2 teaspoons and add more if needed.
  • 6 ounces One 6-ounce package sweetened dried cranberries, chopped (about 1 cup) Chopped into small pieces for easier spreading.
  • 1 cup 1 cup crumbled feta cheese Can be substituted with goat cheese for a tangier taste.
  • 1/4 cup 1/4 cup chopped green onions Can replace with finely chopped chives.
  • 4 large 4 large regular or spinach flour tortillas Use large tortillas that roll without cracking.

Method

Preparation
  1. Add the spreadable cream cheese to a medium bowl. Stir in 2 teaspoons of milk until the mixture looks smooth and creamy. Add more milk if needed.
  2. Stir in the chopped cranberries, crumbled feta, and green onions into the cream cheese mixture until evenly combined.
  3. Set the tortillas on a clean work surface. Divide the filling evenly among them and spread it in a thin, even layer, leaving a small border around the edges.
  4. Starting at one edge, roll each tortilla up tightly without squeezing out the filling. Wrap each roll securely in plastic wrap and refrigerate for at least one hour.
Serving
  1. Unwrap the chilled rolls and place one on a cutting board. Use a serrated knife to cut it into 12 pieces with a gentle sawing motion. Repeat with the other rolls.
  2. Arrange the pinwheels on a serving platter and keep them chilled until serving.

Notes

You can prepare the rolls a day ahead. Store the unsliced rolls tightly wrapped in the refrigerator. Do not freeze them as the texture may suffer.
