Ingredients

Main Ingredients
  • 3 cups fresh cranberries (about one 750 ml package), or frozen, rinsed and patted dry Fresh cranberries should be firm and shiny.
  • 1 whole orange Include the peel; trim thick pith if bitter.
  • 1/2 cup sugar or maple syrup, adjusted to taste Start with less and adjust according to taste.

Method

Preparation
  1. Rinse the cranberries in a mesh strainer and pat them dry. Wash the orange and cut it into quarters.
  2. Use the whole orange, peel included, but trim most thick white pith if needed to avoid bitterness.
Blending
  1. Put the cranberries, orange, and 1/4 cup sugar into a food processor. Process for a minute or two, then stop and taste.
  2. If you want it sweeter, add more sugar and pulse again for a few more seconds.
Taste and Adjust
  1. Check the flavor. If necessary, add sugar or maple syrup slowly until it tastes right.
Refrigerate
  1. Move the relish to a serving dish, cover, and refrigerate. For best flavor, let it sit for a few hours.
Storage
  1. Store leftovers in the refrigerator for up to 2 weeks or freeze in an airtight container for up to 1 year.

Notes
