Method
Preparation
- Lightly grease an 8-inch square pan. Line it with parchment paper that hangs over two sides, then grease the parchment too.
- Stir the graham cracker crumbs, 1/3 cup confectioners' sugar, and melted butter together until the mixture looks like damp sand. Press it firmly into the bottom of the prepared pan.
- Beat the softened cream cheese with 1 cup confectioners' sugar until smooth and fluffy.
- Fold in the thawed whipped topping gently until no streaks remain.
Assembly and Chilling
- Spread the cream cheese mixture evenly over the crust, and then spoon the cherry pie filling on top.
- Refrigerate the dessert for at least 1 hour, though 4 hours or overnight is recommended for cleaner slices.
Serving
- Once well chilled, cut into 9 squares. Serve cold, and refrigerate any leftovers immediately.
Notes
These squares taste even better the next day and are perfect for potlucks and gatherings. Store covered in the refrigerator for up to 5 days.
