Ingredients

For the caramel
  • 1 cup granulated sugar Use white sugar for a classic flavor or brown sugar for a darker taste.
For the custard
  • 10 large egg yolks Use fresh yolks for better texture.
  • 1 can (14 ounces) sweetened condensed milk Provides the main sweetness.
  • 1 cup whole milk or evaporated milk Evaporated milk gives a traditional flavor.
  • 1 teaspoon vanilla extract Can be substituted with vanilla bean paste for a stronger aroma.

Method

Preparation
  1. Separate the eggs and keep only the yolks. Place the yolks in a bowl and gently beat them until they are broken up.
  2. Stir in the sweetened condensed milk until smooth, then add the whole or evaporated milk and the vanilla extract. Mix gently.
  3. Strain the mixture through a fine sieve to ensure a silky texture.
Making the Caramel
  1. In a stove-safe mold, add the granulated sugar over low heat and stir until it melts into a light amber caramel. Once ready, coat the bottom of the mold with the caramel.
Cooking
  1. Pour the custard over the caramel, cover tightly with foil, and steam for 30 to 35 minutes until the center is just set.
Chilling and Serving
  1. Once cooled to room temperature, refrigerate for at least 4 hours. When ready to serve, run a knife around the edge, flip onto a plate, and slice.

Notes

Ensure the egg yolks are at room temperature for the best blending. Watch the caramel closely to avoid burning, and do not rush the chilling step to maintain texture.
