Ingredients

Main Ingredients
  • 2 cups uncooked egg noodles
  • 1 cup cubed deli ham Choose a ham that tastes good on its own.
  • 1/2 cup shredded cheddar cheese Can be substituted with Monterey Jack, Colby, or a mild Swiss blend.
  • 1/2 cup condensed cream of celery soup, undiluted Can be substituted with cream of mushroom or cream of chicken soup.
  • 1/3 cup 2% milk Can be replaced with whole milk, evaporated milk, or unsweetened plain oat milk.
  • 1 teaspoon finely chopped onion
  • 2 teaspoons butter, melted and divided
  • 1/4 teaspoon poppy seeds
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon salt Adjust according to the saltiness of the ham.
  • 1/8 teaspoon dried basil
  • 3 tablespoons dry bread crumbs Can be replaced with crushed crackers, panko, or gluten-free crumbs.
  • Cooking spray, for greasing the dish

Method

Preparation
  1. Heat the oven to 325°F. Cook the egg noodles according to package directions, then drain well.
  2. In a small bowl, combine the ham, cheddar cheese, cream of celery soup, milk, onion, 1 teaspoon of melted butter, poppy seeds, oregano, salt, and basil. Stir everything together until well mixed, then gently stir in the drained noodles.
  3. Lightly coat a 1-1/2-quart baking dish with cooking spray. Spoon the noodle mixture into the dish, spreading it out in an even layer.
Topping and Baking
  1. In a small bowl, toss the bread crumbs with the remaining melted butter, then sprinkle over the top of the casserole.
  2. Bake the casserole uncovered at 325°F for 30 to 35 minutes, until heated through and lightly browned. Let it rest for a few minutes before serving.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 2 months.
  2. Reheat gently, adding a splash of broth or milk if necessary.

Notes

For best results, do not overcook the noodles and skip adding too much salt too soon. Toss the bread crumbs with melted butter for a better texture on top.
