Preparation
- Warm the olive oil in a large pot over medium heat. Add the diced onion and cook for about 5 minutes, stirring now and then, until soft.
- Add the minced garlic and cook for 1 minute. Stir often to avoid browning.
- Add the chopped parsnips and apples to the pot. Stir in the thyme, salt, and white pepper, then pour in the vegetable broth.
Cooking
- Turn the heat to high and bring the broth to a boil. Then lower the heat to medium-low, cover the pot with the lid slightly ajar, and simmer for about 15 minutes.
- Check that the parsnips and apples are tender by piercing a piece with a fork. If needed, simmer for a few more minutes.
- Remove the pot from the heat. Use an immersion blender to blend the soup until smooth, keeping the blender head under the surface.
- Stir in the whipping cream or heavy cream. Adjust the seasoning if needed.
Serving
- Ladle the creamy parsnip and apple soup into bowls. Top with chopped chives, if desired, and serve while warm.
Notes
Store in an airtight container in the fridge for 3-4 days. Can freeze before adding cream for up to 2 months.
