Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Pat the fish strips dry with paper towels and season them lightly with salt and pepper.
- Set up three bowls: flour in the first, beaten eggs in the second, and mixed panko with chili powder, cumin, and garlic powder in the third.
Coating and Baking
- Dredge each fish strip in flour, dip into egg, then press into the panko mixture until fully coated.
- Place breaded fish on the prepared baking sheet, leaving space between the pieces, and spray with olive oil.
- Bake for 8 minutes, then carefully flip each piece and bake for another 6 to 8 minutes until golden and flaky.
Sauce and Assembling Bowls
- While the fish bakes, whisk together mayonnaise, sour cream, lime juice, chipotle powder, and salt in a small bowl.
- Divide rice among 4 bowls, topping each with shredded cabbage, warm black beans, cherry tomatoes, and diced avocado.
- Add the crispy fish strips on top and drizzle generously with the sauce.
Serving
- Garnish each bowl with chopped cilantro and serve with lime wedges.
- For best texture, serve immediately while the fish is still crisp.
Notes
Keep fish, rice, veggies, and sauce in separate containers to prevent sogginess. Store in the refrigerator for up to 2 days.
