Method

Preparation
  1. Stand each cob upright on a cutting board and shave off the kernels with a sharp knife, cutting away from yourself.
  2. In a medium bowl, stir together the baking powder, flour, cornmeal, 1/4 teaspoon salt, black pepper, cayenne pepper, and cornstarch.
  3. Add the egg and heavy cream to the bowl and stir until you have a thick, uniform paste.
  4. Add the corn kernels, crumbled feta, and sliced green onions and fold all ingredients together gently.
Cooking
  1. Heat the oil in a large skillet over medium-high heat until it shimmers.
  2. Using a 1-ounce cookie scoop, portion about 2 tablespoons of batter for each fritter and fry in the hot oil.
  3. Press each fritter flat to about 1/2 inch thick and fry for about 3 minutes, then flip and cook another 2 to 3 minutes until golden.
  4. Transfer cooked fritters to a paper-towel-lined plate to drain and sprinkle with the remaining 1/4 teaspoon salt.
  5. Serve warm with sour cream, extra green onions, hot honey, or a dipping sauce you enjoy.

Notes

Store leftover fritters in an airtight container and refrigerate for 3 to 4 days. For freezing, place in a single layer first, then transfer to a freezer bag or container.
