Ingredients

For the Sauce
  • 1 cup red currant jelly
  • 1 tablespoon chopped shallots
  • 1 tablespoon orange zest
  • 1 tablespoon lemon zest
  • 1 teaspoon grated ginger
  • 1 teaspoon English mustard
  • 1/2 cup port wine
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 teaspoon Morton coarse kosher salt
  • 1/8 teaspoon cayenne pepper

Method

Preparation
  1. Chop the shallots, zest the orange and lemon, and grate the ginger. Measure the remaining ingredients before you heat the pan.
Cooking
  1. Place the red currant jelly in a medium saucepan over medium heat. Stir as it melts. Once it loosens, add the shallots, orange zest, lemon zest, and grated ginger, then stir to combine.
  2. In a small bowl or measuring cup, whisk the English mustard into the port wine until the mixture looks well blended.
  3. Pour the port mixture into the saucepan. Add the orange juice and lemon juice, then whisk to combine. Bring the sauce to a gentle simmer and cook for 5 to 10 minutes.
  4. Stir in the salt and cayenne pepper. Taste carefully, then adjust the seasoning only if needed. Keep the sauce warm over low heat until serving.

Notes

Store leftover sauce in an airtight container in the refrigerator for up to 4 days. It can also be frozen for up to 2 months. Reheat gently before serving.
