  • 1 cup granulated sugar
  • 1 cup sour cream Can substitute with plain Greek yogurt.
  • 1/2 cup canola oil Vegetable or soybean oil can be used as a substitute.

  • 1 tsp cinnamon Can add 1/2 tsp of nutmeg for extra warmth.

Method

Preparation

  2. Beat the eggs and granulated sugar on high speed for about 3 minutes until pale and thick.
  3. Mix in the vanilla, sour cream, and canola oil until smooth.
  4. Fold in the flour, baking soda, and salt and mix for about 30 seconds, just until combined.
  5. Spread half of the batter into the prepared pan, then scatter half of the chopped apples over the top.
  6. Spread the remaining batter over the apples, arranging the rest of the apples on top.
  7. In a small bowl, mix the brown sugar, cinnamon, and melted butter. Sprinkle over the cake batter.
Baking
  1. Bake the cake for 65 to 75 minutes or until a tester comes out clean.

Notes

For best results, do not overmix the batter and ensure the baking time is appropriate depending on your oven. Pair with coffee, tea, or ice cream.
