  • 3/4 cup canned pure pumpkin puree Use 100% pumpkin puree, not pumpkin pie filling.
  • 2 large eggs, at room temperature Can use flax eggs for an egg-free version.
  • 3 tablespoons unsalted butter, melted and slightly cooled Plus more for the griddle.
  • 1 teaspoon pure vanilla extract
For Serving
  • warm maple syrup
  • extra butter
  • optional garnish: whipped cream, toasted chopped pecans, a dusting of pumpkin pie spice

Method

Preparation
  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and pumpkin pie spice.
  2. In a separate bowl, whisk together the buttermilk, pumpkin puree, eggs, melted butter, and vanilla until smooth.
