  • 2 cups all-purpose flour 280 g
  • 1 tsp aluminum-free baking powder 5 g
  • 1/4 tsp baking soda
  • 1/2 tsp salt 3 g
Wet Ingredients
  • 1/2 cup unsalted butter, at room temperature 112 g
  • 1 cup granulated sugar 200 g
  • 2 Tbsp fresh lemon zest 6 g
  • 1 1/2 tsp vanilla extract 6 g
  • 2 large eggs, at room temperature 100 g
  • 1 cup whole milk, at room temperature 240 g
  • 1/4 cup sour cream, at room temperature 60 g
Finishing Touches
  • 1 cup fresh blueberries 170 g
  • 2 Tbsp fresh lemon juice 30 g
  • 2 Tbsp granulated sugar 25 g
  • 1 Tbsp unsalted butter, melted 14 g
  • 1/2 tsp lemon zest
  • 1 cup powdered sugar 120 g
  • 2 Tbsp whole milk 30 g

Method

Preparation
  1. Preheat your oven to 350°F. Grease a 9 x 5-inch loaf pan with nonstick spray and line with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside 1 tablespoon for coating the blueberries.
Mixing the Batter
  1. In a large mixer bowl, beat the butter and sugar on medium speed until light and fluffy, about 3 minutes. Beat in lemon zest and vanilla.
  2. Reduce mixer speed to low and add eggs one at a time. Combine milk and sour cream in a small bowl, then add flour mixture in three parts, alternating with the milk mixture, beginning and ending with flour. Mix just until combined.
  3. Toss the blueberries with the reserved flour, then fold them gently into the batter.
Baking
  1. Pour the batter into the prepared pan and smooth the top. Bake for 56 to 62 minutes, until it springs back when touched and a toothpick comes out with crumbs.
  2. While baking, make the lemon syrup by simmering lemon juice and sugar in a saucepan over medium heat until dissolved and slightly thickened.
  3. Brush the hot loaf with syrup immediately after removing from the oven. Cool in the pan for 10 minutes, then remove and cool completely.
Glazing and Serving
  1. Whisk together glaze ingredients until smooth. Drizzle over the cooled loaf and let set before slicing.

Notes

Store leftovers tightly covered in the refrigerator for up to 3 days. Freeze slices wrapped in plastic for up to 2 months. Warm slices before serving if desired.
