Ingredients

Cracker Dough Ingredients
  • 1 cup flour Use whole wheat flour for a nuttier flavor if desired.
  • 4 oz softened goat cheese Choose soft, creamy goat cheese for best results.
  • 3 tbsp softened butter Can substitute with olive oil for a healthier option.
  • 2 tbsp fresh herbs (thyme, rosemary) Feel free to substitute with your favorite herbs.
  • 1/4 tsp salt Adjust to taste.
  • sesame seeds For topping, can substitute with poppy seeds.

Method

Preparation
  1. Start by placing the softened goat cheese and butter in a mixing bowl. Beat them until smooth and creamy.
  2. Gradually add the flour, salt, and fresh herbs to the creamy mixture. Stir until well combined to form a dough.
  3. Transfer the dough onto a floured surface and roll it into a log shape, about 2 inches in diameter. Wrap it tightly in plastic wrap and refrigerate for one hour.
Baking
  1. Preheat your oven to 350°F (175°C). Remove the log from the fridge and slice it into thin rounds, about 1/4 inch thick.
  2. Place the slices on a baking sheet lined with parchment paper and sprinkle sesame seeds on top.
  3. Bake in the preheated oven for 12-15 minutes until the edges are golden brown.
  4. Cool the crackers on a wire rack completely to achieve crispness before serving.

Notes

Store in an airtight container at room temperature for up to one week, or freeze for up to two months. To reheat, place in the oven at 350°F (175°C) for 5 minutes.
