Ingredients

Dough Ingredients
  • 3 1/2 cups bread flour (about 420 g)
  • 1/3 cup granulated sugar (about 70 g)
  • 2 1/2 teaspoons rapid-rise yeast (1 packet)
  • 1 teaspoon ground mahleb (mahlepi)
  • 1/2 teaspoon ground mastic gum (mastiha)
  • 1/2 teaspoon salt
  • 1 zest orange
  • 1/4 cup unsalted butter, melted and cooled (about 56 g)
  • 2 large eggs
  • 1/2 cup milk (room temperature)
Topping Ingredients
  • 1 small egg, lightly beaten
  • 3 tablespoons flaked almonds

Method

Preparation
  1. Start by combining the bread flour, rapid-rise yeast, sugar, salt, mahleb, and mastic in a large bowl or stand mixer bowl.
  2. Next, add the orange zest, eggs, milk, and melted butter. Mix on low speed with the dough hook until a sticky dough forms.
  3. Place the dough in a lightly greased bowl and cover it with a towel. Let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Turn the risen dough onto a lightly floured surface and divide it into 3 equal pieces, covering them with plastic wrap.
Shaping and Baking
  1. Flatten each piece and roll it into a rectangle. Roll each rectangle up like a Swiss roll, seal the seam, and roll into a rope.
  2. Pinch the rope ends together, braid loosely, tuck the ends under, and place the loaf on a lined baking sheet.
  3. Cover it loosely and let it rise for 60 to 90 minutes. Preheat the oven to 350°F at least 30 minutes before baking.
  4. Brush the loaf with the beaten egg, scatter the flaked almonds over the top, and bake for 40 to 45 minutes until deep golden.
  5. Let the loaf cool on a wire rack before slicing.

This loaf is perfect for holidays and makes a lovely gift. Store wrapped in a clean towel at room temperature for up to 3 days, or in the fridge for up to 5 days. It can also be frozen for up to 2 months.
