  • 2 tbsp fresh chives, finely chopped, plus more for garnish Can substitute with green onions.
For Decoration
  • 24 pieces black olives, halved (for pupils)
  • 12 pieces mozzarella pearl or a dab of cream cheese (for the white of the eye, if not using the potato itself) Omit for a dairy-free version.

Method

Roast the Potatoes
  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss the scrubbed potatoes with the olive oil and 1/4 teaspoon of the salt on the prepared baking sheet.
  3. Roast for 18 to 20 minutes, until the potatoes are fork-tender.
  4. Let them cool for about 10 minutes before handling.
Hollow and Mash
  1. Slice each potato in half and use a spoon or melon baller to scoop out a small amount of the center flesh, creating a shallow well.
  2. Mash the scooped-out potato flesh with the mayonnaise, sour cream, Dijon mustard, garlic powder, remaining salt, and chopped chives until smooth.
Fill the Potato Halves
  1. Spoon or pipe the filling back into the hollowed potato halves, mounding it slightly.
  2. For contrast, press a piece of mozzarella or cream cheese into the center before adding the olive.
Add the Eyeball Details
  1. Top each filled potato with a black olive half for the pupil and dust with smoked paprika for a bloodshot look.
Plate and Serve
  1. Arrange the finished bites on a serving platter and sprinkle with extra chives.
  2. Serve at room temperature or chilled.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Freezing is not recommended for the filled potatoes. Reheat carefully if needed.
