Ingredients

Main Ingredients
  • 3 cups granulated sugar plus 1/4 cup extra for coating the sticks
  • 1 cup water
  • drops orange or black gel food coloring optional, for decoration
  • 1/2 tsp flavoring oil or extract optional, for extra taste
Equipment
  • 6 pieces wooden skewers or craft sticks for suspending the candy
  • 6 pieces clean tall glass jars with lids or one large jar with a cardboard lid
  • 1 piece clothespins or baker's twine to hold the sticks in place
  • 1 piece drinking straws or a clean jar for drying the sticks

Method

Preparation
  1. Wash the jars well and dry them completely. Cut a hole in each lid or use cardboard for the stick.
  2. In a medium saucepan, combine the 3 cups sugar and 1 cup water. Bring it to a rolling boil while stirring.
  3. Remove from heat and stir until sugar is dissolved and the liquid is clear.
  4. Pour the syrup into the prepared jars and let it cool for about 45 minutes.
  5. Dampen the skewers, roll them in the extra sugar, and let them dry.
  6. If desired, stir in food coloring and flavoring into the syrup.
  7. Suspend the sticks in jars ensuring they do not touch the bottom.
  8. Cover jars loosely and place them in a cool spot.
Crystallization
  1. Leave jars undisturbed for 3 to 10 days to allow crystals to grow.
Harvesting
  1. Lift each stick out carefully, breaking any crusts of sugar.
  2. Hang the sticks over a clean jar or lean them on straws to dry for a few hours.
  3. Wrap each stick individually in cellophane and store at room temperature for up to 2 months.

Notes

Store in a dry place. Keep candy wrapped to maintain freshness. Avoid moisture to prevent softening of the crystals.
