Ingredients

Noodles and Broth

  • 1 pack candy eyes For a fun presentation.
  • 2 stalks green onions Garnish with fresh herbs if desired.

Method

Cooking
  1. Cook the purple sweet potato noodles according to the package directions, or mix regular noodles with purple food coloring.
  2. In a medium pot, warm the chicken or vegetable broth over medium heat until steaming, but do not let it boil.
Assembly
  1. Divide the cooked noodles into serving bowls and ladle the hot broth over them.
  2. Cut the mozzarella cheese into ghost shapes and place them on top of the noodles.
  3. Press the candy eyes onto the mozzarella ghosts.
  4. Garnish with sliced green onions and serve immediately.

Notes

Store leftovers in the refrigerator for up to 3 days, and freeze without broth for up to 2 months. Be careful not to overcook the noodles.
