Ingredients

For the bundles
  • 1 lb fresh green beans Choose firm, bright green beans for best results.
  • 6 to 7 slices uncooked bacon Thick-cut bacon can be used for a meatier bite.
  • 1/4 cup shredded parmesan Can substitute with pecorino romano for a sharper flavor.
  • 12 pieces fresh chives, uncut Alternatively, use thin green onion strips.
For the butter glaze
  • 1/4 cup melted butter Use salted butter and reduce the garlic salt if desired.
  • 1/8 tsp black pepper
  • 1/8 tsp Italian seasoning Can be substituted with dried thyme or rosemary.
  • 1/2 tsp garlic salt Adjust according to taste.

Method

Preparation
  1. Preheat the oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Partially cook the bacon in the oven for 7 minutes to give it a head start.
Blanching the Green Beans
  1. Trim the ends of the green beans, then boil them in lightly salted water for 2 minutes.
  2. Immediately transfer them to a bowl of ice water to stop the cooking process, then pat them dry.
Making the Butter Glaze
  1. Melt the butter and whisk in the black pepper, garlic salt, and Italian seasoning.
  2. Toss the blanched green beans in the butter glaze until evenly coated.
Wrapping and Baking
  1. Lay a slice of bacon on a parchment-lined sheet, place 10-12 beans in the center, wrap the bacon around them, and tie a chive around each bundle.
  2. Bake the bundles in the oven for 7 minutes until the bacon is cooked.
Serving
  1. Transfer to a serving tray and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze for up to 2 months. Reheat gently to avoid drying out the bacon.
