Ingredients

For the crust
  • 2.5 cups all-purpose flour, plus more for rolling
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup cold unsalted butter, cubed 2 sticks
  • 6-10 tablespoons ice water
For the filling
  • 6 cups fresh blueberries (3 pints)
  • 2/3 cup granulated sugar (up to 3/4 cup if the berries are tart)
  • 1/4 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon cold unsalted butter, cut into small cubes
For the egg wash
  • 1 large egg beaten with 1 tablespoon milk
  • to taste Coarse sugar for sprinkling (optional)

Method

Preparation of the Pie Dough
  1. Whisk the flour, salt, and sugar in a large bowl. Cut in the cold butter until the pieces are about pea-sized. Sprinkle in the ice water slowly until the dough holds together. Divide into two discs, wrap, and chill for at least 2 hours.
Mix the Blueberry Filling
  1. In a large bowl, toss the blueberries with sugar, flour, cornstarch, cinnamon, lemon juice, and lemon zest until no dry spots remain. Lightly crush a few berries for a softer filling, if desired. Refrigerate filling for up to 24 hours.
Prepare the Oven and Bottom Crust
  1. Preheat the oven to 425°F. Roll one dough disc into a 12-inch circle, fit into a 9-inch pie dish, and set aside.
Fill, Top, and Bake
  1. Pour the blueberry filling into the crust, spreading evenly. Dot with butter, refrigerate while preparing the top crust.
  2. Roll the second dough disc into a 12-inch circle, cut into strips, and weave them into a lattice top. Press edges into bottom crust, trim, and flute. Brush with egg wash, sprinkle with coarse sugar, and bake at 425°F for 25 minutes.
  3. Reduce temperature to 375°F, add a crust shield, and bake for an additional 40-50 minutes until filling bubbles and reaches about 200°F.
Cooling and Storing
  1. Let the pie cool on a wire rack for at least 4 hours before slicing. Store leftovers in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Make sure to chill the dough for the best flaky crust. Allow pie to cool completely to set the filling before slicing.
