Ingredients

For the soup
  • 2 tablespoons olive oil, plus extra for serving Use extra for drizzling on top.
  • 1 medium yellow onion, finely diced
  • 2 ribs celery, finely diced
  • 2 medium carrots, peeled and finely diced
  • 3 large garlic cloves, minced
  • 1/4 teaspoon crushed red pepper flakes
  • 4 cups low-sodium vegetable stock Can substitute with low-sodium chicken stock.
  • 2 cans (15 oz each) white beans, drained and rinsed Cannellini, navy, or northern beans work well.
  • 8 ounces escarole, thoroughly washed and roughly chopped Choose fresh, crisp leaves.
  • Salt and black pepper to taste
  • Crusty bread, for serving For dipping into the soup.

Method

Preparation
  1. Warm the olive oil in a 4-quart Dutch oven or soup pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5 to 7 minutes, stirring now and then, until the onion turns translucent and the vegetables begin to soften.
  3. Stir in the garlic, crushed red pepper flakes, and some black pepper. Cook for about 1 minute, stirring often to prevent the garlic from browning.
  4. Pour in the vegetable stock and add the drained, rinsed beans. Bring the soup to a boil, then lower the heat and simmer for 15 to 20 minutes, or until the vegetables are soft.
  5. Add the chopped escarole a few handfuls at a time, pushing it gently into the hot soup as it wilts. Simmer for another 3 to 5 minutes, until the escarole is tender.
  6. Taste the soup and adjust the salt and black pepper as needed. Ladle it into bowls, drizzle each serving with a little olive oil, and serve with crusty bread.
  7. Let any leftover soup cool, then place it in airtight containers. Refrigerate for up to 4 days or freeze for up to 1 month. Reheat gently before serving.

Notes

For meal prep, refrigerate leftovers for up to 4 days or freeze portions for up to 1 month. Adding herbs like dried oregano or thyme can enhance flavor.
