Ingredients

Main Ingredients
  • 2 small small sweet potatoes (about 1 lb total)
  • 8 pieces pecan halves
  • 4 large large marshmallows
  • 2 tbsp unsalted butter, melted
  • 2 tbsp maple syrup
  • 1/4 tsp salt

Method

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Peel the sweet potatoes and cut each into 4 even slices.
  3. Place the sweet potato slices in a bowl. Add the melted butter and salt, then toss until every piece is lightly coated.
Baking
  1. Arrange the slices on a baking tray in a single layer. Bake for 15 minutes, then flip each slice and bake for 10 minutes more.
Finishing Touches
  1. Remove the tray from the oven and switch the oven to broil. Drizzle the maple syrup over the sweet potato slices, then cut the marshmallows in half and place one half on each slice.
  2. Broil for 2 to 3 minutes, just until the marshmallows are lightly browned. Watch them closely to prevent burning.
  3. Top each toasted marshmallow with a pecan half and serve right away.

Notes

For substitutions, you can swap pecan halves for chopped walnuts, use mini marshmallows, replace maple syrup with honey, or add a pinch of cinnamon. Watch out for unevenly cut sweet potatoes and excessive broiling time.
