Ingredients

For the Migas
  • 1 teaspoon extra-virgin olive oil
  • 1/4 cup diced white onion
  • 2 pieces Roma tomatoes, diced
  • 1/2 to 1 piece jalapeño, stemmed and diced Adjust heat to preference.
  • 1 clove garlic, finely chopped
  • 1/4 teaspoon sea salt Adjust to taste.
  • 1 pinch freshly ground black pepper
  • 5 large eggs, beaten Use fresh eggs for best results.
  • 1/4 cup crumbled tortilla chips Add near the end to maintain crunch.
  • 1/2 cup shredded Monterey Jack cheese Can substitute with cheddar or pepper jack.
  • 1/4 cup chopped fresh cilantro, for topping Optional, can substitute with green onion or parsley.
To Serve
  • 4 small tortillas, warmed Use corn or flour as preferred.
  • 1 piece avocado, sliced
  • 1 piece lime wedges For added brightness.
  • 1 serving salsa

Method

Preparation
  1. Warm the olive oil in a medium nonstick skillet over medium heat. Once the oil shimmers, add the onion, tomatoes, jalapeño, garlic, salt, and a few grinds of black pepper. Stir often and cook for about 2 minutes, just until the vegetables soften and smell fragrant.
  2. Pour in the beaten eggs, then add the crumbled tortilla chips. Stir gently so the eggs cook evenly and the chips spread through the mixture. Keep the motion light and steady, because you want the eggs to stay soft and moist.
  3. Continue cooking for about 1 to 2 minutes, or until the eggs are just set. They should still look slightly soft. Stir in the shredded Monterey Jack cheese and take the pan off the heat right away so the eggs do not overcook.
Assembly
  1. Divide the migas evenly between two plates and top with fresh cilantro. Serve with warm tortillas, avocado slices, lime wedges, and salsa to let everyone build their tacos.
Serving
  1. Serve the tacos while the eggs are still warm and the tortillas are soft. Add a squeeze of lime for brightness, and finish with salsa for extra flavor.

Notes

Store leftovers in an airtight container in the fridge for up to 1 day. Reheat gently to avoid overcooking the eggs. Freezing is not recommended as texture may change.
