Ingredients

For the Salad
  • 2 pieces pears (halved, poached in Riesling) Best with Bartlett or Bosc pears.
  • 4 cups arugula Can substitute with baby spinach or mixed greens.
  • 1/3 cup crumbled blue cheese Feta or goat cheese can be used as alternatives.
  • 1/3 cup candied walnuts Pecans can be used as a substitute.
For the Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons white wine vinegar Balsamic vinegar can be used as an alternative.
  • 1 tablespoon honey Consider using a sugar substitute if watching sugar intake.

Method

Preparation
  1. Start by placing the halved pears in a saucepan. Pour in enough Riesling to cover the pears, then add a touch of sugar. Simmer gently for about 15 minutes until the pears are tender but not falling apart. Once they’re done, carefully remove them from the liquid and let them cool.
  2. In a small bowl, whisk together the olive oil, white wine vinegar, and honey until well combined.
Assembly
  1. On a large platter, spread out the arugula evenly. Arrange the cooled, sliced poached pears on top.
  2. Sprinkle the crumbled blue cheese generously over the pear slices. Next, add the candied walnuts.
  3. Drizzle the prepared dressing over the top just before serving.
Serving
  1. Gather your friends or family around the table and enjoy this beautiful, elegant dish.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Avoid freezing the salad to maintain texture.
