Ingredients

For the Pastry
  • 5 1/2 cups all-purpose flour
  • 2 teaspoons salt
  • 1 cup cold unsalted butter, cubed
  • 1 cup cold shortening, cubed
  • 1 large egg
  • 1 tablespoon white vinegar
  • 1 cup ice-cold water To bring the egg and vinegar up to 1 cup of liquid.
For the Filling
  • 5 cups saskatoon berries, fresh or frozen Do not thaw frozen berries completely before use.
  • 1/2 cup granulated sugar Adjust based on berry sweetness.
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter, cubed For dotting over berries.
For the Lattice Top
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • 1 tablespoon granulated sugar, for sprinkling For added crunch on the crust.

Method

Make the Pastry Dough
  1. Stir the flour and salt together in a large bowl. Cut in the cold butter and shortening until the mixture resembles coarse oatmeal with some pea-sized bits left.
Add the Liquid
  1. Beat the egg in a measuring cup. Add vinegar and top up with ice-cold water to the 1-cup mark. Stir this into the flour just until the dough holds together.
Chill the Dough
  1. Divide the dough into 5 portions, flatten into discs, and wrap tightly. Refrigerate 2 discs for 1 hour, and freeze the other 3.
Roll and Fill the Pie Shell
  1. Preheat the oven to 350°F. Roll one chilled disc into a 12-inch circle and fit it into a 9-inch pie plate. Toss the berries with sugar and cornstarch, spread them in the crust, and dot with butter.
Add the Lattice Top
  1. Roll the second disc into a 12-inch circle, cut into strips, and weave into a lattice. Seal edges and brush the top with egg wash, sprinkling sugar on top.
Bake, Cool, and Serve
  1. Bake for 90-100 minutes until the crust is golden and the filling bubbles. Cool on a wire rack and serve warm or at room temperature.

Notes

Choose plump, firm berries for the best flavor. If using frozen berries, do not thaw fully. Store leftovers in the refrigerator for up to 4 days.
