Method

Preparation
  1. Preheat the oven to 400°F and line a large rimmed baking sheet with parchment paper.
  2. Cut the sausage, apples, onion, and potatoes into 2-inch pieces to ensure even cooking.
Mixing Dressing
  1. In a small bowl, whisk together the olive oil, maple syrup, Dijon mustard, ground sage, and dried thyme until well combined.
Toss Ingredients
  1. Place the sausage, apples, potatoes, onion, and baby carrots in a large bowl.
  2. Pour the dressing over the top and toss until everything is well coated.
  3. Spread the mixture in an even layer on the prepared baking sheet and season lightly with salt and pepper.
Roasting
  1. Bake for 45 to 50 minutes, stirring at the 20-minute and 40-minute marks, until the vegetables are tender and the mixture is golden.
  2. If necessary, continue roasting and check the potatoes for doneness every few minutes.
  3. Finish with chopped fresh thyme or parsley, and let cool slightly before serving.

Notes

For best results, ensure ingredient sizes are similar to cook evenly. Avoid crowding on the baking sheet for optimal roasting. Adjust seasoning due to potential saltiness from the sausage.
