Method
Preparation
- In a large bowl, combine ground beef, ground pork, bread crumbs, minced onion, milk, eggs, Worcestershire sauce, salt, and black pepper. Mix thoroughly, but avoid overmixing.
- Shape the mixture into about 48 one-inch meatballs.
Browning the Meatballs
- For stovetop: Heat vegetable shortening in a large skillet over medium-high heat. Cook meatballs in batches for 5 to 7 minutes, browning all sides. Ensure centers reach 155°F for 15 seconds.
- For oven: Preheat oven to 400°F. Arrange meatballs on a rack over a foil-lined baking sheet and bake for about 20 minutes until browned.
Slow Cooking
- Transfer browned meatballs to a slow cooker. Add grape jelly and chili sauce, then cover. Cook on HIGH for 2 to 3 hours or LOW for 4 to 6 hours.
- Stir gently before serving, and keep the slow cooker on warm if serving over a longer period.
Stovetop Sauce Option
- For a quicker finish, put browned meatballs, grape jelly, and chili sauce in a covered pot and simmer for about 10 minutes over medium heat.
Notes
Store leftovers in an airtight container in the fridge for 3 to 4 days or freeze uncooked meatballs. Reheat to 165°F before serving.
