Ingredients

For the dough
  • 1 package active dry yeast 1/4 ounce
  • 1.25 cups warm milk 110° to 115°
  • 0.25 cup butter softened
  • 1 large egg room temperature
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 4 to 4.5 cups all-purpose flour
For brushing
  • Melted butter for brushing

Method

Preparation
  1. In a large bowl, dissolve the yeast in the warm milk.
  2. Add the softened butter, egg, sugar, salt, and 3 cups of the flour. Beat until smooth.
  3. Stir in enough of the remaining flour to make a soft dough that is easy to work with.
Kneading
  1. Turn the dough onto a floured surface and knead for 6 to 8 minutes until smooth and elastic.
  2. Place the dough in a greased bowl and turn it once so the top is lightly coated. Cover and let rise in a warm place for about 1 hour, or until doubled in size.
Shaping
  1. Punch the dough down gently, then cut it in half.
  2. Divide each half into 36 pieces and roll each piece into a small ball.
  3. Place 3 balls into each greased muffin cup, cover the pan and let the dough rise again for about 30 minutes until doubled.
  4. Brush the tops with melted butter before baking.
Baking
  1. Bake at 375° for 15 to 18 minutes, or until lightly browned.
  2. Move the rolls to wire racks and serve warm.
