Ingredients
Method
Make the Cardamom Syrup
- In a pan, combine the water, sugar, and crushed cardamom pods. Bring it to a boil and cook until slightly sticky, avoiding full one-string consistency.
Add Rose Water and Keep It Warm
- Stir in the rose water and keep the syrup warm on low heat or covered until needed.
Mix the Dry Ingredients
- Fluff the flour with a fork and mix it with the milk powder and baking soda until even.
Form the Dough
- Add 1 teaspoon ghee to the dry mix. In a bowl, stir yogurt or lemon juice into 2 tablespoons of milk, then add to the dry ingredients to form a smooth and soft dough.
Shape and Fry the Jamuns
- Divide the dough into 14-18 portions and roll into balls with greased hands. Heat ghee or oil, test with a small dough piece, and fry jamuns until golden.
Soak, Garnish, and Serve
- Move fried jamuns into warm syrup and let soak for about 3 hours. Garnish with chopped pistachios before serving.
Notes
Store gulab jamun in syrup in an airtight container in the fridge for 4-5 days. You can freeze fried jamuns without syrup for up to 2 months.
