Ingredients

For the cranberry syrup
  • 1 bag 12 oz cranberries, frozen or fresh Choose firm and brightly colored cranberries. Thaw frozen cranberries before chopping.
  • 1 cup water
  • 1 cup granulated sugar Can be substituted with cane sugar or a sugar alternative.
For the drink
  • 1 bottle 16 oz sparkling lime water Plain sparkling water with a squeeze of fresh lime juice can be used alternatively.
  • optional extra frozen cranberries, lime twists or wedges, and sugared cranberries for garnish

Method

Preparation
  1. Chop the cranberries. If using frozen cranberries, thaw them first, then pulse in a blender or food processor until roughly chopped.
  2. Make the cranberry syrup by adding chopped cranberries, water, and sugar to a saucepan. Stir over medium heat for about two minutes until the sugar dissolves.
  3. Strain the mixture through a fine-mesh strainer into a bowl or measuring cup to separate the liquid from the cranberry pieces and let it cool.
Assembly
  1. Fill two highball glasses with ice. Optionally, add about 1/4 cup of frozen cranberries to each glass.
  2. Pour 2 to 3 tablespoons of cranberry syrup into each glass and top with sparkling lime water, stirring gently.
  3. Garnish each glass with a lime twist, lime wedge, or sugared cranberries if desired. Serve immediately.
  4. Refrigerate any leftover syrup in a covered jar for up to seven days.

Notes

Adjust the amount of syrup in each glass according to desired sweetness. This mocktail can be made ahead by preparing the syrup, which can also be frozen for longer storage.
