Preparation
- Heat the oven to 350°F and prepare two 8-inch round cake pans by buttering and flouring them.
- Sift the cake flour, baking powder, salt, and sugar into a mixing bowl.
Mixing the Batter
- Add vegetable shortening, 1/2 cup of milk, and vanilla to the dry mixture and mix until combined.
- Beat the batter for 2 minutes, then add the remaining 1/4 cup of milk and the egg. Beat for 2 more minutes until smooth.
Baking
- Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes.
- Check for doneness with a toothpick and ensure the tops spring back when touched.
Cooling and Assembling
- Let the cakes cool in the pans for 5 minutes, then turn them out onto a wire rack to cool completely.
- Spread raspberry preserves on the bottom layer, top it with the second layer, and dust with confectioners' sugar before serving.
Notes
Ensure to cool cake layers completely before assembly to avoid melting the jam. The recipe is easy to follow and great for beginner bakers.
