  • 0.25 cups diced bell pepper Any color of bell pepper can be used.
  • 0.25 cups diced ham Can substitute with cooked bacon or turkey.
  • to taste salt and pepper Adjust seasoning according to preference.

Method
 

Preparation
  1. Start by cracking the 8 eggs into a large mixing bowl. Add 1/2 cup of cottage cheese. Using a blender or immersion blender, blend the mixture until it becomes creamy and smooth.
  2. Stir in the 1/2 cup of shredded cheddar, 1/4 cup of diced bell pepper, and 1/4 cup of diced ham. Season the mixture with salt and pepper according to your taste.
  3. Spray your silicone muffin molds generously with cooking spray to prevent sticking.
Cooking
  1. Evenly pour the egg mixture into the prepared molds, making sure not to overfill them.
  2. Place the molds in your air fryer and set the temperature to 300°F. Cook for 10-12 minutes or until the egg bites are set.
  3. Once cooked, check for doneness, then let the egg bites cool slightly before gently removing them from the molds.

Notes

These egg bites are quick to prepare, customizable, and perfect for meals or snacks. Store in the fridge for up to 4 days or freeze for up to 2 months. Reheat in the microwave or stovetop before serving.
