Ingredients
  

Dry Ingredients
  • 2 cups almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/4 cup coconut oil, melted Can substitute with butter or light vegetable oil.
  • 1/2 cup brown sugar or coconut sugar Coconut sugar is lower on the glycemic index.
  • 1 teaspoon vanilla extract Almond extract can also be used for a more intense flavor.
  • 1 egg A flaxseed egg can be used for a vegan version.
Add-Ins
  • 1/2 cup chocolate chips Dark or white chocolate chips can be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium-sized bowl, mix together the almond flour, baking soda, and salt.
  3. In another bowl, whisk together the melted coconut oil, brown sugar, and vanilla extract.
  4. Add the egg to the wet mixture and mix until fully incorporated.
  5. Pour the dry ingredients into the wet mixture and stir gently until just combined.
  6. Fold in the chocolate chips until evenly distributed.
Baking
  1. Scoop out portions of the dough onto the prepared baking sheet, leaving space between each scoop.
  2. Bake for 10-12 minutes or until edges are golden brown.
  3. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze in a single layer then transfer to a freezer bag. Reheat in the microwave for about 10 seconds or bake for a few minutes at 350°F.
