Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, mix together the almond flour, baking soda, and salt.
- In another bowl, whisk together the melted coconut oil, brown sugar, and vanilla extract.
- Add the egg to the wet mixture and mix until fully incorporated.
- Pour the dry ingredients into the wet mixture and stir gently until just combined.
- Fold in the chocolate chips until evenly distributed.
Baking
- Scoop out portions of the dough onto the prepared baking sheet, leaving space between each scoop.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, freeze in a single layer then transfer to a freezer bag. Reheat in the microwave for about 10 seconds or bake for a few minutes at 350°F.
