Method
 

Preparation
  1. Preheat your oven to 325°F.
  2. Season the pork shoulder generously with kosher salt.
  3. Heat the olive oil in a large Dutch oven over medium-high heat until shimmering.
  4. Sear the pork on all sides until browned, about 8 minutes.
Braising
  1. Surround the seared pork with sliced onions, sliced apples, and minced garlic.
  2. Add Dijon mustard and sprinkle fresh thyme over the top.
  3. Pour apple cider over the ingredients.
  4. Cover the Dutch oven with a lid and place it in the preheated oven.
  5. Let it braise for 2.5 to 3 hours until the pork is fork-tender.
Serving
  1. Remove the pork from the oven and shred it using two forks.
  2. Mix the shredded pork back with the braised apples and onions in the pot.
  3. Serve warm, spooning flavorful pan juices over the top.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  2. This dish can be frozen for up to 3 months. Thaw overnight in the fridge.
