Preparation
- Begin by pouring 1/2 cup of apple cider into a small saucepan and simmer over medium heat until it reduces to 1/4 cup, then remove from heat and let cool slightly.
- Preheat your oven to 375°F (190°C) and prepare a muffin pan by greasing it or lining it with muffin liners.
- In a large bowl, whisk together 2 cups of flour, 2 teaspoons of cinnamon, and 1.5 teaspoons of baking powder.
- In another bowl, mix together 3/4 cup of sugar, 2 eggs, 1/3 cup of melted butter, and the slightly cooled reduced apple cider until well combined.
- Gently fold the wet ingredients into the dry ingredients until just combined, being careful not to overmix.
Baking
- Divide the batter among 12 muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Brush the baked muffins with 1/4 cup of melted butter and roll them in the sugar and cinnamon mixture immediately after removing from the oven.
