Ingredients

Pork Chops
  • 4 pieces bone-in, thick-cut pork chops (about 1 inch thick, 8 oz each) Look for high-quality cuts with good marbling.
  • 1.5 teaspoons kosher salt, plus more to taste
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
Glaze
  • 1.5 cups apple cider
  • 2 tablespoons packed light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 sprig fresh rosemary
  • 2 tablespoons unsalted butter, cold, cubed Add at the end for a glossy finish.
Garnish (optional)
  • 1 piece Honeycrisp apple, thinly sliced For garnish.
  • to taste Fresh thyme For garnish.

Method

Preparation
  1. Pat the pork chops dry with paper towels. Season generously with kosher salt and freshly ground black pepper. Let sit at room temperature for 15-20 minutes.
Cooking
  1. In a large oven-safe skillet, heat olive oil over medium-high heat until shimmering. Place pork chops in the skillet and sear for 3-4 minutes on each side until golden-brown.
  2. Transfer chops to a plate and tent loosely with foil.
Making the Glaze
  1. Lower heat to medium. In the same skillet, add apple cider, brown sugar, Dijon mustard, apple cider vinegar, and rosemary. Scrape browned bits from the skillet bottom.
  2. Simmer for 8-10 minutes until reduced by half and thickens.
  3. Remove rosemary and whisk in cold butter cubes one at a time.
Final Steps
  1. Return pork chops to the skillet and turn to coat in the glaze. Allow to sit for 1-2 minutes to warm through.
  2. Plate the glazed pork chops and garnish with apple slices and fresh thyme if desired.
Storage
  1. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  2. Reheat in a skillet over low heat with a splash of apple cider to keep moist.

Notes

Ensure not to overcook the pork; check for an internal temperature of 140-145°F. Let the pork rest after seasoning for even cooking.
