Ingredients

Base Ingredients
  • 1/4 cup granulated sugar Can substitute with honey or maple syrup.
  • 1/4 cup apple cider vinegar Can substitute with white wine vinegar.
  • 1/4 cup apple cider Apple juice can also be used.
  • 1 small apple, thinly sliced Use half of a large apple if necessary. Optional.
To Serve
  • 1 can (8 oz) sparkling water or soda water Choose your preferred type.
  • to taste Fresh rosemary Can also use mint, sage, citrus slices, etc. for garnish.

Method

Preparation
  1. Wash a small 6 oz mason jar and lid in hot, soapy water. Sterilize by boiling for at least 10 minutes or run through a dishwasher cycle on high heat.
  2. Add the sugar to the jar, then pour in the apple cider vinegar and apple cider. If you prefer, skip the apples.
  3. If using apples, add thin slices until the jar is full but not overflowing. Ensure the slices are loose for proper flavor blending.
  4. Close the jar tightly and shake until the sugar begins to dissolve. Place the jar in the refrigerator for at least 24 hours.
Serving
  1. Pour 1 oz of shrub over ice in each glass. Top with sparkling water or soda water and garnish with rosemary or your choice of garnish.
Storage
  1. Keep the shrub in the refrigerator for several months if stored properly. Remove apple slices after about 3 days.
  2. Watch for changes in smell, color, or bubbling. Discard if anything seems off.

Notes

This shrub is perfect for make-ahead gatherings, as it can be prepared in advance and stored in the refrigerator. Customize flavors with different herbs, garnishes, or types of soda water.
