Preparation
- Preheat your oven to 425°F (220°C).
- Wash and prepare your vegetables: halve the Brussels sprouts, cube the butternut squash, and slice the red onion.
Toss with Olive Oil and Seasoning
- Drizzle 3 tablespoons of olive oil over the vegetables and add salt and pepper to taste.
- Use your hands to toss the vegetables until well coated.
Roast the Vegetables
- Spread the seasoned vegetables on a baking sheet in a single layer.
- Roast in the oven for 25 to 30 minutes, tossing halfway through.
Prepare the Vinaigrette
- In a small bowl, whisk together apple cider vinegar, 1/4 cup olive oil, Dijon mustard, honey, and a pinch of salt.
Combine and Serve
- Once the vegetables are roasted, combine them with the cooked farro in a large bowl.
- Drizzle the vinaigrette over the top and toss gently.
- Serve warm or at room temperature.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months. When reheating, add a splash of water or broth to maintain moisture.
