Ingredients

Flatbread Base
  • 2 pieces small naan breads or pizza dough rounds about 6 to 7 inches across
  • 1 large apple sliced thin
  • 3 pieces fresh figs quartered
Toppings
  • 1 tablespoon olive oil for brushing
  • 1 clove garlic crushed
  • 3 to 4 oz goat cheese crumbled
  • 1 cup baby arugula for garnish before serving

Method

Preparation
  1. Preheat the oven to 400°F. If using homemade pizza dough, roll it to your preferred thickness and shape it into two small rounds. Set the naan or dough rounds on a baking sheet.
  2. Slice the apple thinly, then quarter the figs. If the apple slices are very wide, cut them in half.
  3. Stir the crushed garlic into the olive oil and brush this mixture over both crusts.
Assembling and Baking
  1. Arrange the apple slices and fig pieces over each crust in a single layer and scatter the crumbled goat cheese over the fruit.
  2. Bake for about 10 minutes, checking near the end of cooking time. The crust should be crisp and the goat cheese soft.
Serving
  1. Let the flatbreads cool briefly, then top them with fresh baby arugula. Cut into wedges for a light meal or into squares for an appetizer. Serve while warm.

Notes

Ensure to slice the apples thinly. Avoid adding too many toppings to prevent a soggy center. Wait until after baking to add arugula to prevent wilting.
